All Food Groups Chicken Casserole
I created this dish for a cooking contest. I consider it a perfect meal. The ingredients take from each food group. This is perfect for people who may not eat healthy during the day and want to make up for it at dinner time. To me, it also is a nice way to conclude summer (BBQ) and welcome Fall (apples, apples, apples!). The combination may sound strange, but it actually is very good.
I didn't wind up winning the contest, but I was very proud of it.
INGREDIENTS
2 cups of frozen turnip greens
1 lb. of boneless, skinless chicken breasts
1 tbsp. of vegetable oil
1/4 cup of sweet BBQ sauce
1 3/4 cup chopped Granny Smith apple
2 cups cooked brown rice
1/4 tsp. of chives
1/8 tsp. garlic
1/8 tsp. red pepper
1 egg white
1/2 cup of shredded six cheese (*This is a package that mixes six different cheeses together: Mozzarella, Provolone, Parmesan, Asiago, Fontina, and Romano)
1/2 cup shredded cheddar cheese
PREPARATION
1. Preheat the oven to 400 degrees F. Grease a casserole dish.
2. Heat up the turnip greens in warm water. They should be tender enough to eat when ready. Drain and squeeze excess moisture out of them. Set aside.
3. Pound the chicken breasts.
4. Heat oil and cook chicken until there is no pink left. Remove from skillet, reserving the drippings. Cut chicken into small bits. Mix chicken with BBQ sauce and set aside.
5. Add cooked rice to skillet.
6. Mix chives, garlic, and red pepper to egg white and beat.
7. Add egg white to rice and stir. Rice is ready when it is getting browned and starting to clump together.
8. Add 6 cheese to rice and stir until it is combined.
9. Put rice in the bottom of the casserole dish, spreading evenly.
10. Combine chicken and apples. Spread evenly on top of rice.
11. Spread the turnip greens evenly over chicken and apples.
12. Spread cheddar cheese evenly over the turnip greens.
13. Cover the casserole dish with aluminum foil. Bake for 15 minutes or until cheese is melted on top.
